Garlic Chutney Sandwiches

Garlic chutney on white bread and butter.

This is easily on of my fav sandwiches. I had a friend in school who used to get this for the lunch. I remember exchanging my lunch to eat her sandwiches. Then my mom realized this and she started making these quick fix sandwiches for me. Really they take no time at all. Just slather some butter on your bread, sprinkle some garlic chutney and Voila!!!! lunch ready.:)
Recipe:
4 slices either white or brown bread.
Some softened butter.
2 tsp of garlic chutney ..more if you like the garlicky flavor.
chutney recipe:
1 pod garlic peeled and chopped
1/2 cup dry dessicated coconut
salt to taste
sugar to taste
2 tsp red chilli powder
1 tsp ajwain seeds(optional)
1 tsp corriander seeds(optional)
dry blend everything in a blender and store the chutney in an airtight container for 1 week. This chutney tastes great with savory snakcs like vadas too.

Lay down 2 slices of bread, slather the butter and sprinkle with chutney. Assemble into sandwich and eat immediately:) Make the 2nd sandwich and eat that too!

Grilled Chicken Sandwich...ciabatta bread and grilled veggies too.

Sandwiches are a great fav at our place. My little duckie calls them as "sammich". He doesnt eat the entire sandwich but just the most interesting part in it- chicken or tomatoes as the case may be. My hubby S loves them. He loves to watch tv/surf the internet while eating his sandwich or two. And praising me on my culinary skills at the same time. Making sandwiches is really easy for me but the key part is, to eat it as soon as assembled. I mean, who likes a soggy, falling apart kind of sandwich??? The best side dish with a sandwich? A soup or a salad or just a bag of chips. My perfect way to eat a sandwich is a hot soup on a cold day or a light salad on a summery day and always a bag of chips. Ever tried laying crispy chips in middle of sandwich and then eating it??? It tastes great.
The above sandwich is a grilled chicken sandwich. I grilled chicken breasts in oven with marinade of olive oil, salt, pepper and a mix of dried basil and italian herbs. At the same time, I roasted few veggies- onions, red bell pepper and tomatoes. I used green salad as a healthy base for my ciabatta bread. Now something about this bread. This bread can be grilled little in oven with olive oil drizzled on it and then eaten as a sandwich or just make a sandwich as it is. Be careful while grilling ciabatta bread though, a little too much time turns it into a teethfalling-extra crispy-extra hard kind of bread. I hated it the first time I made it. Got it right on the second try though.
Recipe:
1 pack ciabatta bread - I got mine from Jewel bakery.
1 chicken breast- cut into strips
Marinade ingredients:
salt to taste
pepper to taste
1/2 tsp dried basil
1/2 tsp italian herb mix I used mccormick mix
1 tomato, washed and sliced
1 red onion sliced
1 red bell pepper cut into strips
greens-mix of spinach arugula, romaine or whatever suits you
part skim mozzarella cheese
my sandwich dressing:
I used Italian dressing, mustard, heinz ketchup and little hot sauce. eyeballed all the ingredients for 1 Tbs each. added little olive oil and salt/pepper/dried basil. then added 1/4 cup each of ketchup and italian dressing to give it a sweet-creamy taste with a little sourness.
It doesnt matter if any of the ingredients are missing. The easiest thing is to play around with them and pick a taste that suits you.

Preparation:
Preheat oven to 350F. Slice horizontally through the ciabatta bread if not already sliced. Brush the inside of both sides with olive oil and sprinkle little dried basil on it. Grill just the lower halves of sandwich bread in the oven per instructions on the packet. Keep an eye on them all the time because the tend to crisp quickly. Marinate chicken with marinade ingredients. Keep aside for 15 ,mins. Mix the veggies with the chicken and grill till meat is cooked. Let it cool for 5 mins. In mean time, take the upper halves of sandwich bread and on the inside layer the cheese, grill till the cheese melts Get your bread base ready. Layer the lower half of the bread with salad greens, Then add the meat and the roasted veggies to it. Then Drizzle or apply liberally the dressing. Put together the ttwo halves of bread and enjoy with a bag of chips or as it is.

Grilled Veggie Sandwich



My husband S loves Sandwiches. Be it egg, chicken or veggies. Sandwiches can be described as complete food when it contains veggies and some kind of protein like egg, chicken. My mom mainly used to make veggie sandwiches or chutney sandwiches. Simple sandwiches with cucumber, tomato, butter, coconut chutney and maybe grilled or not were my favorite. My neighbor used to make awesome egg-potato sandwiches which me and my sister used to love. Sandwiches in India were really simple, right? Plain white bread usually "wibs", butter, tomato ketchup and green chutney were the only condiments used. But those sandwiches used to be delicious.

This sandwich I made is my mother-inlaws recipe. My mother's recipe is similar but instead of dry chutney, her chutney had more liquid. I used italian bread for this sandwich. This is an Indian sandwich and for that I have used many Indian ingredients except for the bread:)

Recipe:

Italian bread 1 loaf

Amul butter - absolutely delicious..dont mind the calories for this one

Grated coconut either fresh or pre-packaged will do

Cilantro

2-3 green chilllies

salt to taste

veggies of your choice: I use tomato, potato, cucumber

ketchup - I serve this on side to prevent the sandwiches from being soggy.

I use george foreman grill to grill the sandwich, but I am sure grilling in oven will have the same effect.


Preparation:

Make sure that the butter is at room temperature and easily spreadable.

wash and chop the cilantro. chop the chillies into small pieces. wash and cut the tomato and the cucumber into circles. Boil and peel the potato and cut into circular pieces.

Warm up the grill and keep it ready. Take 2 slices of bread. Butter up one side of a single slice of bread -if you are health concious both side if you are not :)I butter up both slices for me, and one slice for my husband:)) layer the veggies on the slice of bread and then put the dry chutney. sprinkle salt per taste. When the grill is hot, put the assembled sandwiches in the grill. Brush the outer sides of the sandwich with olive oil or butter so that the sandwich turns really toasty.

Cut and serve the sandwich with ketchup on side.

In the above picture I served the sandwich with some kala chana or bengal gram salad and chips. This sandwich is perfect for breakfast. Serve with some salad or soup and make it into lunch or dinner.
